Peppers & Egg

The other night we whipped up some Peppers and Egg for dinner. Delicious Italian dish and very easy to make. It's one of those meals that can work for either breakfast, lunch or dinner. There's no written copy of our recipe floating around, so I scoured the web for an "official" list of ingredients but found only one that describes the meal the same way that we make it. SicilianCulture.com agrees, so we're gonna go ahead and call this the OFFICIAL recipe for Peppers & Egg.

1. Take a green pepper (yellow, red and orange work great too) and one red cherry pepper (depending on if you like your food a bit spicy). Slice that all up with some onion, sprinkle a little salt and black pepper on top and fry it until the peppers soften.

2. Next, whip up some eggs in a bowl and pour them into the pan with the peppers and onion. The egg-to-pepper ratio really depends on your preference. Want it more eggy? Add some more eggs! This isn't science, this is food.

My apologies for not providing exact measurements. I honestly don't have any, and nor do either of my parents, grandparents or aunts and uncles. Everything is prepared to taste, and believe me, we do quite a bit of tasting a long the way.

So funny as I just made my version yesterday--we put little chunks of potato in. I'll be posting about it on my blog soon as it's *such* a great dish for any time of day :)
