I make this for my husband when I am short on time and it is a great thirty minute meal! It is also the perfect pantry meal because I always have the ingredients on hand. The spiciness can be cut down or increased according to personal preference. Simply add more or less hot pepper flakes and sauce. Buy good Italian tuna in olive oil and do not drain the oil off.
You will need:
2 12.5 ounce cans of Italian tuna in oil
1 29 ounce can tomato sauce
3 Cloves of garlic minced
1 Small white onion finely chopped or ∏ regular white onion
1 Pound tube shaped pasta or spaghetti
1 Teaspoon of red pepper flakes
2 Tablespoons of hot sauce
2 Tablespoons of olive oil
Pinch of sugar
Salt and pepper to taste
Fresh basil to taste
Grated pecorino cheese to taste
How you do it:
Start a large pot of water on the stove over high heat. In a separate saucepan on medium heat, drizzle two tablespoons of olive oil. Next, add the chopped onion and cook for five minuets and then the minced garlic (Do Not Burn Garlic). Add the tomatoes sauce, un-drained cans of tuna, hot pepper flakes, hot sauce, sugar, salt and pepper. Cook for at least twenty minuets. When the water comes to a boil, add a pinch of salt and cook pasta according to package instructions. Before draining the pasta reserve a few tablespoons of cooking liquid. Add liquid to the sauce, drain pasta and toss in the tuna sauce. Throw some fresh basil and grated cheese over the top and toss again. Eat and enjoy!
