What's Christmas without pizzelle cookies? I'll tell you, it's not Christmas, at least not an Italian Christmas. For those of you unfamiliar with Italian cookies, a pizzelle is part waffle, part holiday decoration, and 100% simple and delicious treat. In my opinion, a Christmas celebration is not complete without the pizzelle. In fact, my fondest holiday memories involve stealing freshly baked pizzelle right from my mothers pizzelle iron as she would whip out hundred of them during the holiday season.
Making pizzelle is fairly simple, with the exception of owning a pizzelle iron or press. Here is a pretty basic recipe I pulled from FoodNetwork.com.
What You'll Need
6 eggs
1 cup sugar
3/4 cup vegetable oil
3 cups all-purpose flour
1 tablespoon baking powder
3 tablespoons fennel seeds
1/4 cup unsweetened cocoa powder, and 1 additional egg, or
1/4 cup amaretto and an additional 1/4 cup all-purpose flour
How You Do It
Heat the pizzelle iron until very hot. Pour 2 tablespoons of batter onto the iron, close it, and return to the heat. Cook until golden brown, about 2 minutes. Repeat until all the batter is used. Once the pizzelle is done cooking carefully remove it with a fork and cool on a rack or wax paper.

nice find & already tried the recipe.. btw didn't know that "a Christmas celebration is not complete without the pizzelle." guess here in germany things are different..

I know that pizza is very popular in Australia ( watch here ), because there are many people of Italian origin. Typically Italian varieties of pizzas are always available, but there is also an Australian pizza australiana, which usually has a base with tomato sauce and mozzarella cheese with bacon and egg. This pizza is also sometimes used shrimp. I rekkomenduyu all to try this pizza.

My mother-in-law made these year-round, with more at Christmas. We don't use the baking powder, so I'll try that.
Also, she used anise flavoring instead of the fennel seeds. Last year my daughter rolled them up when they were warm, and stuffed them with sweetened ricotta, garnishing them with shaved chocolate and powdered sugar. Delicious dessert cannolis!
